For those of you who plan to follow along with Cook a Book: Cinnamon Star Bread, our Facebook Live demonstration on Friday, April 3 at 11 am:
On Wednesday (April 1) or Thursday (April 2) mix up the following recipe* from Holiday and Celebration Bread in Five Minutes a Day by Zoe Francois and Jeff Hertzberg, M.D.: 1 ¾ cup lukewarm water (100 degree F or below) 1 tablespoon granulated yeast 1 tablespoon salt 4 large eggs, lightly beaten ½ cup honey 1 stick unsalted butter, melted (can substitute ½ cup of canola, grapeseed, or coconut oil or melted margarine) 7 cups bread flour (can substitute all-purpose flour) Mix water, yeast, salt, eggs, honey, and melted butter in a 6 quart lidded food container. Mix in the flour without kneading, using a heavy-duty stand mixer (with paddle attachment) or a wooden spoon. Use wet hands to incorporate the last bit of flour if needed. Cover tightly with lid and refrigerate until Cook a Book starts! You can also mix up your Cinnamon Sugar filling in advance: Mix ½ cup sugar with 1 tablespoon ground cinnamon. *For Whole-Grain Dough follow the same technique but use these ingredients: 2 ¾ cup lukewarm water (100 degree F or below) 1 tablespoon granulated yeast 1 tablespoon salt 4 eggs, lightly beaten ½ cup honey ¼ cup vegetable oil, melted coconut oil, or melted butter 5 cups whole wheat flour 3 cups all-purpose flour Zoe Francois and Jeff Hertzberg, M.D. have also authored 'Healthy Bread in Five Minutes a Day', 'Artisan Bread in Five Minutes a Day', 'Artisan Pizza and Flatbread in Five Minutes a Day', 'The New Healthy Bread in Five Minutes a Day', 'The New Artisan Bread in Five Minutes a Day', and 'Gluten-Free Artisan Bread in Five Minutes a Day'.
